The extra virgin olive oil production process mainly involves the mechanical pressing of olives, without the use of chemical solvents or intensive refining processes. The olives are harvested, washed and ground into a paste, from which the oil is extracted through pressing or centrifugation.

Extra virgin olive oil is considered the highest quality type of olive oil because it is obtained directly from olives and usually has the highest quality and most intense flavor compared to other types of olive oil.
