Vinification: The phenolic maturation period of the grapes that make up Bardolino is very late and therefore particularly favourable weather conditions are necessary for this wine to express its full character. The harvested grapes are immediately destemmed and crushed. The fermentation temperature profile peaks at 25/28°C and then decreases to 18/20°C. Maceration is prolonged as much as possible. Malolactic fermentation also takes place during alcoholic fermentation.
The Bardolino is stored in steel in contact with its own yeasts, which are regularly returned to suspension, until the month of March when it is bottled.
Not excessive in colour it offers an intense bouquet of fruit, especially cherry and morello cherry, and on the palate it evolves into intense spicy notes of pepper with exceptional persistence.
Excellent also at a temperature of 15/16°C, it goes well with first courses and white meats and some fish, especially salt cod.
